Cooking method: Indirect
Ingredients
- 1 Packet cake mix
- Icing
- 2 cups icing sugar
- 3 Tbs cocoa
- 1 Tbs butter
- 1/4 cup milk
- 1 - 2 cups desiccated coconut
Method
Prepare the cake mix as directed on the packet. Pour the mixture into a buttered drip tray.
Cook for 20-25 minutes over a low fire with the kettle lid on. Take the cake out of the BBQ and allow to cool.
Whilst the cake is cooling it's time to make the icing. Combine the icing sugar and cocoa in a large bowl. Melt the butter and add to the bowl along with the milk. Mix until a fluid yet not runny consistency is formed.
Now the cake is cool and the icing is made, cut the cake into squares. Dip your squares in the icing and roll in the coconut.
