Ingredients:
- 2 whole chickens
Peri-Peri Baste
- 1 cup olive oil (extra virgin of course)
- 6 cloves garlic, crushed
- 2 tsp peri-peri chilli
- 4 Tbsp lemon juice
Method:
To prepare the baste, heat oil in a skillet, add garlic and saute until golden brown. Stir in the peri-peri and lemon juice then allow to cool.
Butterfly the chickens by cutting along each side of the backbone and spread flat (you may need to score along the back of the breastbone). Rub the chickens with some oil and salt then put them on the barbie over a moderate heat for about 20 minutes, basting frequently with the Peri Peri.
