Olivier Normandin has been described as a “Frozzie” Restaurateur. Frozzie = French-Aussie, or Frog- Ozzie.
Olivier is originally from Bordeaux , but he now declares himself an Australian Baby as he swore allegiance on the 18th of September 2007.

Having previously worked in the IT industry, his love and passion were always food and wines and his ability to make such a leap in his professional life is summed up in one word, his total belief in: HOSPITALITY.

“I claim to come from that part of France where we are the most hospitable and now live in what I consider to be the most hospitable city as well. By putting quality and a warm welcome, attention to detail and authenticity, great products and genuine interest all together, one should have a good recipe for success” he says.

Opening about three years ago, Le Bistro in Prahran was Olivier’s first venture in the hospitality industry, more recently he launched Chez Olivier L’Epicerie in Elsternwick. Chez Olivier is a reflection of his love for genuinely authentic, traditional and generous French food, quite often redesigned and with an Australian twist.  This is always accompanied by some excellent wines both from his old and new countries.
