BBQ recipe of the week

Plenty of great BBQ’s are assured this Christmas at the home of Maddy Brown from Claremont in Western Australia, winner of our November BBQ Recipe Competition. Maddy dazzled us with her recipe for Chilli Ginger and Lime Salmon - doesn’t it look delicious. Test it out yourselves at home.

The brand new Heat Beads® Entertainer BBQ is on its way to you Maddy. Maddy tells us her old BBQ was really on its last legs, so the Entertainer couldn’t be going to a better home!

Chilli Ginger and Lime Salmon

Ingredients

Salmon Steaks

Stones Green Ginger Wine

Red and Green Chillies, diced

1 Fresh Lime

3 Lime leaves, shredded

Method

Marinate salmon steaks in Stones green ginger wine, diced red and green chilli, the juice of a fresh lime and 3 shredded lime leaves.

Light up the coals and when they glow, its time to go! Cook salmon ’till beautifully griddle marks appear on the outside, but still succulent on the inside.

Simply upload a four minute video of you or your friends BBQ’ing your favourite recipe on Heat Beads® BBQ Briquettes to YouTube - we’ll be looking for the best footage of your delicious recipes actually cooking over the Heat Beads® briquette’s, lots of fun and good humour, and of course your comment about why you love to cook over Heat Beads®! Then you’ll be in the running to be one of three winners of a Heat Beads® Entertainer BBQ valued at $499.

It is a time-honoured tradition in backyards, and at parks and beaches across Australia, to hear the sizzle of a barbecue, the smell of sausages, seafood, steak and other delectable offerings wafting from the char grill. One man eager to learn about this tradition and advancements of cooking over live hot coals and BBQ briquettes in modern Australian cuisine is the American grilling expert, Steve Raichlen. He hits our shores next week to learn about the Australian char grilling tradition as part of research for his new book, Planet Barbeque - travels on the world’s barbecue trail.

He is author of 28 books in total (which have been translated into 12 languages), and has also defeated the Iron Chef Roksbura Michiba in a barbecue battle on Japanese television.
