BBQ Damper Recipe

Camping is an Aussie tradition. Sitting by the open fire, looking up at the stars, breathing in the fresh country air. There’s nothing better. Except of course, when you’re doing all of that with a full stomach. Why not bring another Aussie tradition into the mix and cook up some damper? It’s great on its own, a fantastic starter before the main course, or perfect for mopping up delicious campfire stews. Plus, it’s easy to make too. Follow our simple recipe and see for yourself!

Ingredients

  • 2 cups self raising flour
  • ½ cup milk
  • ½ cup water
  • 2 tablespoons butter
  • 1 tablespoon herbs, chopped

Method

Place your flour in a bowl, then gradually knead and rub the butter into it. After a while of mixing and moving it around, the combination should start to look like breadcrumbs.

Slowly add the milk and water, continually mixing so that the breadcrumbs start to resemble dough.

Once your mixture begins to look like a nice dough, and has some thickness to its consistency, mix your freshly chopped herbs throughout.

Knead your mixture out into roll shapes and dust them with a little bit of extra foil to prevent the dough sticking while it cooks.

Wrap each “roll” in foil and bake over hot Heat Beads® BBQ Briquettes. We recommend around 30 minutes – to test if your damper is done, tap the bottom of the roll. If it sounds hollow, you’re good to go!
