Classic Teriyaki Marinade recipe

Use as a marinade, a glaze or a barbecue sauce on grilled meats and seafood.
Ingredients:
- ½ cup dark soy sauce
- ½ cup sake or dry sherry
- ½ cup mirin (sweet rice wine)
- 2 tablespoons sugar
Method:
Combine all ingredients in a saucepan and bring to the boil over a high heat. Reduce heat to let simmer until the sugar has dissolved and the sauce is thick and syrupy, about 5 minutes. Allow to cool. This will keep refrigerated in an airtight container for 2 weeks.
