Dry Spiced Beef Skewers with Bay Leaves and Garlic

Celebrity chef, author & restaurateur, Adrian Richardson, cooks Dry Spiced Beef Skewers with Bay Leaves and Garlic over Heat Beads® BBQ Briquettes on highly rated TV show Good Chef Bad Chef.

Ingredients:

  • 500g rump, cut into cubes
  • 20 bay leaves, 20 garlic cloves

Rub:

  • 1 teaspoon ground black pepper, 1 tsp ground white pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon chili powder
  • 2 tablespoons ground coriander seed, toasted
  • 1 tablespoon dried oregano
  • 2 tablespoons smoked paprika
  • 1 tablespoon salt

Method:

Create a marinade using cayenne, chilli powder, pepper, paprika and vinegar.

Coat meat in this marinade and allow to sit for an hour. Slide beef on to skewer.

Rub with a little oil and grill.
