Dry Spiced Beef Skewers with Bay Leaves and Garlic

Ingredients:
- 500g rump, cut into cubes
- 20 bay leaves, 20 garlic cloves
Rub:
- 1 teaspoon ground black pepper, 1 tsp ground white pepper
- 1 teaspoon cayenne pepper
- 1 tablespoon chili powder
- 2 tablespoons ground coriander seed, toasted
- 1 tablespoon dried oregano
- 2 tablespoons smoked paprika
- 1 tablespoon salt
Method:
Create a marinade using cayenne, chilli powder, pepper, paprika and vinegar.
Coat meat in this marinade and allow to sit for an hour. Slide beef on to skewer.
Rub with a little oil and grill.
