Whole Salmon BBQ Recipe

Ingredients
- whole Tasmanian salmon, have your fishmonger dress & fillet the fish ready for BBQing
Marinade
- coriander
- garlic
- shallots
- fish sauce
- sesame oil
- light soy sauce
- palm sugar
- limes
- chillies
Method
Create a marinade by first combining some garlic, shallots, fish sauce, sesame oil and light soy sauce in a mortar. Use the pestle to pound all ingredients together.
Next, add a small amount of palm sugar, a squeeze of half a lime and chillies to the mortar. Continue to pound with the pestle until all ingredients are mixed well to form a delicious marinade.
Place your salmon in a large tray and give it a generous rub of marinade. Leave the fish to marinate for at least half an hour.
When ready to BBQ, wrap your marinated salmon in grease proof paper and foil. Twist the ends of the foil to ensure the parcel will stay closed throughout the cooking process.
Place your salmon parcel on your prepared BBQ until cooked to your liking (open the parcel and use the flake method to test for doneness).
Remove cooked salmon from the BBQ and place on a large serving platter.
Dress the plate with some of the marinade ingredients (shallots, chillies, coriander, sauces) and allow guests to add what they wish to their dish. Squeeze more fresh lime over the fish just before serving. Enjoy!
